SAKE STORY

SAKE is an alcoholic beverage made from fermentation of rice and water. Although often referred to as "rice wine" in English, it is more like beer in its brewing process, as it is produced through multiple levels of fermentation. In SAKE production, "multiple parallel fermentation" is the name of the game. "Multiple fermentation" simply means that there are multiple steps in the fermentation process. The starch contained in rice grains is converted into sugars by KOJI MOLD, and then the resulting sugars are converted into alcohol by yeast. Get it? All of the sakes we carry are imported from family owned and run breweries throughout Japan who have been brewing for generations (some are in their 6th generation) and are still producing their craft by traditional standards to this day.
